A rich and comforting chowder made with smoked salmon, potatoes, corn, and fresh herbs. It’s hearty, simple to prepare, and perfect for cooler West Coast days.
Ingredients
2 tablespoons butter
1 small onion, diced
2 celery stalks, chopped
2 cloves garlic, minced
3 medium potatoes, peeled and diced
3 cups chicken or vegetable broth
1 cup corn
1 cup heavy cream
250 g smoked salmon, flaked
1 teaspoon dried dill, or 1 tablespoon fresh dill
1/2 teaspoon black pepper
Salt to taste
2 green onions, sliced
Fresh parsley for garnish, optional

Directions
Melt the butter in a large pot over medium heat.
Add the onion and celery and cook for about 5 minutes, until softened.
Stir in the garlic and cook for another minute.
Add the potatoes and broth. Bring to a boil, then reduce the heat and simmer for 15–20 minutes, until the potatoes are tender.
Stir in the corn, cream, dill, and black pepper.
Add the smoked salmon and gently stir to combine.
Simmer for another 5 minutes, being careful not to boil the chowder.
Taste and add salt if needed.
Serve topped with sliced green onions and fresh parsley.
